Handmade noodles, fried rice and dumplings are the cornerstones of Turpan Restaurant’s unique take on Chinese cuisine. With Chinatown well-established in Sydney’s CBD, the city isn’t short on Chinese restaurants, but down along the Kensington stretch of Anzac Parade, chef-owner Rocky Yu is bringing a taste of his hometown in Xinjian Uyghur Autonomous Region to discerning Asian food fans. Completely halal, Turpan offers Chinese dishes from a road less travelled, including highlights such as the savoury crepes stuffed with egg and chive and a pulao fried rice with lamb cutlets, carrot and onion that joins the dots between Chinese cuisine and the province’s Central Asian neighbours of Mongolia, Russia and Pakistan. Chef Yu’s personal recommendations include Xinjiang-style fried eggplant with the restaurant’s special sauce, a spicy dish of marinated chicken cutlets, potatoes and capsicum, and a range of pan-fried dumplings.
