Similarly, the cellar is replete with fine South Australian wines that are a match made in heaven for the modern Australian cuisine on offer. To that end, a great way to get acquianted with ei8ht’s repertoire is to order two or three dishes from the ‘Something Little’ selection – ei8ht’s signature oysters Kilpatrick, market fresh seafood ceviche simply soused in lemon juice and South Australian Joseph olive oil, or the vegetarian grilled eggplant salad. Further on, bigger courses for ‘A Bit More’ feature the fish of the day and an opulent mixed grill, with sweet treats, cheeses, and digestifs to finish.
