Petrol Restaurant is the brainchild of chef Clinton Whiteman, whose extensive travels across the Mediterranean and the Middle East led him to establish a restaurant of his very own. Allowing his experiences to guide his actions at the Potts Point restaurant, Whiteman has managed to bring Petrol to the forefront of Sydney’s competitive culinary scene. His training in the art of French cooking and his experience with Mediterranean cuisine – thanks in part to his Spanish heritage – enable him to create a modern Australian menu using time-honoured European cooking techniques, seamlessly fusing the best of old and new.
At Petrol Restaurant on Springfield Avenue, the dishes are almost too beautiful to eat. But believe us, you won’t mind destroying your stunningly plated meal once you’ve had just one bite – the outback cuisine on offer is otherworldly. Begin your dinner by trying some of the house-smoked meats – emu, crocodile, wild boar, kangaroo, wallaby and wild boar – created by chef Whiteman directly at the restaurant, or go for starters like pan fried cheese with bush honey and wild thyme, wattletree seed sod cakes with wild rainforest lime chilli chutney, or wild boar kofta with spices, broadbean, saltbush and lemon butter. For mains, you can’t go wrong with the saltbush smoked rabbit paella with mountain pepper berry spice and blue gum oil or the Moroccan-inspired mountain pepper leaf chicken tajine searched made with quandong, chickpeas, broad beans, yoghurt and millet grain. Don’t let yourself miss out on a uniquely Australian meal at Petrol in Sydney’s Potts Point – reservations are a must!
