About Carbón

Carbón Bondi is one of the most exciting restaurants to open in this iconic Sydney neighbourhood of late. Specialising in Mexican cuisine made using South American parrilla techniques, the menu is brimming with unique and creative dishes that will leave you all kinds of happy… or maybe that’s the margarita selection. Either way, it’s all good. The space itself is carefully curated with minimalist furniture, natural light and sizeable chandelier, complementing the beautifully presented dishes just perfectly. Located along Bondi Road, a stone’s throw from the beach, Carbón specialises in Mexican cuisine that is designed to be shared. Reservations are essential to avoid disappointment.

Carbón Sydney comes with a unique concept that has got Bondi locals weak at the knees. Focused on transporting guests to the idyllic beaches of Tulum via tasty food and cocktails, there’s a whole lot to love about this Mexican restaurant on Bondi Road. Speaking of cocktails, we recommend keeping an eye out for the signature margarita or the spicy jalapeno version made using Ocho reposado, lime juice, Cointreau and fresh jalapenos. Otherwise, maybe a pisco sour or Mezcal negroni is more up your alley? Let’s just say with the cocktail choices on offer at Carbón, you’ll be raring to go.

Kick things off with freshly made guacamole served with lotus chips and fresco cheese, some chargrilled squid with black garlic mayo and black ink sauce and a serving of grilled street corn. Great food, great cocktails and great service! We will definitely be back. The whole fish was delicious and the berocca paloma cocktail was really tasty.

The food, service and hospitality was amazing. The tuna civiche was so good we had to have two. Definitely try the “Smoke, Sour & Sweet” cocktail great balance of flavors. Thank you to the team at Carbon we will definitely be back.
