The views out over Sydney harbour from Manta’s Cowper Wharf Roadway premises only underline this well-known Woolloomooloo seafood restaurant’s philosophy – to stay close to the source, know their suppliers, and know precisely when the fish was caught. The same goes for the other ingredients that make their way into Manta’s dishes, with owner Rob Rubis maintaining a farm to table ethos that mandates the use of produce sourced from his family’s own farm and, for example, beef from Australian Grassfed Meats, guaranteeing hormone-free and grass-fed cuts. Head chef Daniel Hughes is similarly passionate, knowing the source of everything that makes it into his kitchen, from the potatoes through to the chocolate. As for the food itself, Manta are famed for their oysters, but it’s true that everything on the restaurant’s menu has a pedigree that’s the envy of other Sydney restaurants.
